Tapenade is a classic Provençal dish consisting of puréed or finely chopped olives, capers, and olive oil, and in some versions, garlic, lemon and/or anchovies for added zing. It is simple, quick and easy to make, and delicious as a dip scooped with celery sticks, Parmesan crisps, Fathead crackers, or Keto/low-carb bread, or as a topping for chicken, fish or lamb chops. And it’s a great way to get more healthy fat into your diet.
This version omits the capers (using lemon juice in their place for the sour bit), but feel free to add them back in if you like!
- 1 cup of pitted olives (black, green, or a mix)
- 1/4 cup of parsley
- 2 cloves of garlic, minced
- 1 tablespoon lemon juice
- 2 tablespoons olive oil
- unrefined sea salt to taste
Place all the ingredients into a food processor and blend well.
